Roasted veggies:
Ingredients:
1 eggplant
1 zucchini
1 Sweet potato
(optional – beet, butternut squash)
4 Tablespoons Olive oil
½ Teaspoon Salt
½ Pepper
½ Thyme
Preparation:
- Preheat oven to 400°F / 200°C
- Peel vegetables and cut to wide slices
- Create heart-shaped slices using cookie cutters from various sizes
- Line a baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray. Lay out the vegetables, and add olive oil and seasoning.
- Bake for 25-30 minutes.
Halloumi cheese and eggs:
Ingredients:
1 ¼ cups halloumi cheese, cut into ½ inch slices (250 g)
3 Eggs
1 Tablespoon olive oil
Salt
Pepper
Preparation:
- Create heart shape in the middle of each halloumi slice
- Fry the halloumi cheese, flip over and an crack an egg into the hole
- Add salt and pepper.
Corn cups:
Ingredients:
1 cup flour
4 Tablespoons Olive oil
1 cup of corn (250 g)
1 ¼ cup cream cheese (250 g)
2 Tablespoon mayonnaise
Preparation:
- 1. Preheat the oven to 350°F (180°C)
- In a bowl, combine all ingredients and stir to combine.
- Pour the mixture into a cupcake tin and bake for 25 minutes.
- Allow to cool, but serve warm.
Feta cheese and chickpeas salad:
Ingredients:
2 cups Mixed greens salad (80g)
1 ¼ cup feta cheese cut into slices
1 cup Chickpeas
1 medium Bell pepper
½ jalapeno or anaheim pepper
1 Tablespoon Olive oil
Preparation:
- In a medium bowl, mix all ingredients.
- Add olive oil, lemon juice, and seasoning
- Mix until well combined
